Food Content // Trying Something New – Cedar Planked Salmon*
It’s been a long summer trying to find meals to cook every single day. Usually 5 days a week LM is at school so that’s one less meal I need to worry about. She alternates between packed lunches and dinners depending on what day it is (I have a hand website I can go to and order for the week ahead) and it’s helped with expanding her taste buds. She’s always willing to try something once, some of the stuff she likes, some she does. This summer we’ve discovered she likes corn on the cob and meaty fish. Both are great and much better than the fact she also discovered she likes hot chocolate, so I’ve been trying to come across some recipes to make that she’ll enjoy and incorporate one or both of her new likes.
I came across a recipe for Cedar Planked Salmon on Seasoned Cookery School that although on the first glance, looked quite complicated, after a good read I realised it wasn’t and would be perfect for the barbecue. Although we’re now inching closer to September my mum swears blind the heatwave is coming back so I’ll definitely have a chance to give it a try.
“Planked” barbecue food is actually becoming incredibly popular and did you know that different wood gives a different flavour?
Salmon is a great fish to introduce children too, it’s versatile, packed with Omega 3 which is great for growing brains and it’s quite meaty. Salmon is also a great fish to put on the barbecue. Some of my earliest memories is heading away inland and having a barbecue by the river and my dad cooking salmon fillets in tin foil, they were delicious. This recipe is similar but you cook the fillets on cedar planks on top of the barbecue. This gives the salmon a light smoky flavour which to me is always a true taste of barbecue. I mean I usually deliberately buy smoked barbecue sauce, but this recipe shows you how to do it yourself.
I can only imagine how great it would taste and since the recipe encourages you to use your own marinade I can make it with a sticky soy sauce that LM will really love.
You can view the full recipe here if you wish to try it yourself.
